Lots and lots of summer recipes this month! Over on my blog (have you noticed my new front page design by the way??) this Creamy Corn Risotto is the perfect way to capture those corn-on-the-cob flavours into a simple one pot dinner, and for my Macknade residency my Greek Pork Steaks with Tzatziki and Cheats Pitta is a great way to make gyros-style meat on the barbecue this weekend.
Over at meal prep website Project Meal Plan I’ve created a Creamy Dill Pickle Pasta Salad recipe which in my notes I call a ‘pickle lovers pasta salad’ that’s not for the feint of heart, but which will be utter bliss for pickle lovers everywhere, and a Ginger Lime Syrup which both works as a summer drink topped up with sparkling water, and includes instructions for using it to mix the perfect Moscow Mule, a riff on my Mint Mojito Syrup which went viral during the pandemic.
And not one of my recipes, but my parents have grown a delicious cucumber glut we’ve been working through so I made
’s Cucumber Salad with Red Onions and Sesame. The curious blends of lemon and sumac, toasted sesame seeds and toasted sesame oil made it a real winner worth bookmarking.As I’ve mentioned, I’ve barely been able to vegetable garden this year so the offerings have been pretty sparse. What we have enjoyed however is two Sunday roast dinners in a row with our home grown peas, and whilst I’ve yet to have a home grown tomato salad yet this year (!) morning breakfasts are pretty much something creamy (at the moment spreadable goat’s cheese) on toast (my homemade white loaf or my favourite local Gilda sourdough) topped with sliced cherry tomatoes on repeat.
I have no idea what other bounty, if any I’ll have, but at least the tarragon (which
’s newsletter made me think is supposed to be difficult to grow?) keeps on expanding, though I think my sage could benefit from some repotting once it has rained enough for me to be able to pry the plants out of their terracotta vessels!
