Roast Rhubarb with Tarragon

This simple way to quickly roast rhubarb is great both for breakfast served over tangy Greek yogurt perhaps with a handful of granola, or as the tart, aromatic, fruity element of a more elegant dessert, spooned over rice pudding, piled onto the side of a rich, creamy vanilla panna cotta, or even adorning a billowing winter pavlova with trickles of syrup running down the side. I love how the tarragon sprigs infuse the sugar syrup which coats rather than soaks into the rhubarb quills for a new way with rhubarb that is just a little different than the vanilla and cardamom versions of yesteryear.
