My favorite, exceedingly simple use of Dijon (from an NYT recipe, if memory serves) is mixing mustard in equal parts with brown sugar and glazing salmon with it. Perfect flavor complements!

Oh I'm going to try that! I tried doing a glazed salmon recipe for this month but I think I was overcomplicating things as I was never quite happy with it - this sounds perfect! Thank you!
