This one has been on my list since you posted it, and I finally made it for lunch today with the last of the season zucchini! I love the mix of flavors - salty feta, bright lemon, pepper, mint, and zucchini... what a simple, lovely combination. Thank you!
Thanks for some great ideas about what to do with feta, one of my favorite cheeses. I’m always throwing it into salads and adding it to omelettes and burgers, but whipping it is new to me and mixing with warm courgettes (zucchini here in the U.S.) and chickpeas sounds really good! I wish I could find the jarred variety of beans that’s so popular in Britain, but I don’t think they’re available here yet – or, if they are, I imagine they’re very expensive. I’ll be making my own to add to this dish.
I hope you enjoy it! And yes, I do feel a little bad for my American readers using jarred beans so much, but if you could get them you'd understand why us British food writers are so obsessed! (But then I remind myself we don't get canned fire roasted tomatoes and feel better about it...!) But if you do want to seek them Bold Bean Co is a British brand but I also love the imported Spanish ones I know you can get in delis and online -- I used to see rows of them in Monsieur Marcel at Los Angeles' Original Farmers Market, but as a student they were out of my price range at the time!!
Thanks for the heads up on Monsieur Marcel at the Original Farmers Matket. They will probably have the jarred variety, which I’m dying to try, even if they are expensive. It’s always fun to go there anyway—and I do love a treasure hunt for an ingredient!
