I’ve always been a huge fan of raw carrots. As you say, fresh-picked ones from the garden are best. Lucky you to grow them! Both the Sri Lankan and cinnamon-pistachio salads sound like something I’d serve for the upcoming fall and winter holidays. Thanks for this deep dive into one of my favorite vegetables, Rachel!
